We are seeking a refined and highly organised Chef de Partie to oversee a dedicated section within our kitchen brigade at The Ramsay, our new Scottish Seafood and Grill restaurant. This is an exciting opportunity to be part of a flagship opening, showcasing the very best of Scotland’s larder with a strong emphasis on exceptional, locally sourced produce.
Key Responsibilities:
– Take ownership of your designated section, preparing and presenting dishes to an exceptional standard, with a focus on premium Scottish seafood and expertly grilled meats – Champion the use of high-quality, locally sourced ingredients, ensuring seasonality and provenance are reflected in every dish
– Execute meticulous mise en place, ensuring seamless and refined service delivery – Guide, train, and inspire junior members of the brigade, fostering a culture of excellence and pride in local produce – Maintain precise stock control, with a focus on sustainability, minimising waste, and respecting premium ingredients – Collaborate closely with the wider culinary team to ensure consistency across all outlets within the castle – Perform with professionalism and composure during high-volume and peak service periods – Contribute creatively to menu development, seasonal offerings, and daily specials, celebrating Scotland’s finest ingredients – Ensure impeccable presentation and consistency in portioning, aligned with luxury hospitality standards Our Values Transparency | We ensure clarity in communication so that there are no surprises
