Head Chef

Big Blue Hotel is looking for an experienced and passionate Head Chef to lead the kitchen at our popular Blues Bar & Brasserie.

We are proud of our reputation for high-quality, freshly prepared food and are looking for a head chef who shares our commitment to food quality over convenience. This is a hands-on leadership role overseeing all aspects of the kitchen operation in a busy hotel environment.

Key Responsibilities

• Lead and manage the kitchen team
• Oversee all food production across breakfast, lunch and evening service
• Maintain high standards of fresh, quality-driven cooking
• Menu development in line with our modern brasserie style
• Manage stock, food costs and supplier relationships
• Ensure full compliance with food safety and hygiene standards
• Train and develop the kitchen brigade About You
• Proven experience as a Head Chef or Sous Chef within hotels and/or established restaurants (pub experience not considered).
• Strong background producing fresh food
• Experience leading and developing a kitchen team and food safety
• Passionate about quality ingredients and consistency
• Organised and confident managing a busy service What We Offer
