Contract Type: Permanent We are seeking an experienced and versatile Area Relief Chef to support our GPA contract, delivering consistently high standards of food quality, safety and service across multiple sites. You will play a key role in maintaining compliance with Health & Safety, Food Hygiene and COSHH regulations, while ensuring our food offer remains fresh, innovative and customer focused.
Job Description We are looking for a strong kitchen leader who can confidently step in for the Head Chef, support menu development and new food innovations, and drive profitability through excellence in execution. This role will involve travelling to and supporting various sites, sometimes at short notice, and working closely with the Head Chef, Account Lead Chef and Catering Manager to deliver against budgetary and operational targets.
Key Responsibilities
Lead kitchen operations in the absence of the Head Chef, maintaining company standards, policies and procedures relating to Health & Safety, Food Hygiene and COSHH.
Support multiple sites within the GPA contract as and when required, adapting quickly to different teams, kitchens and service styles, sometimes at short notice.
Deliver excellent food preparation and service across both retail and hospitality offers, ensuring food production, presentation and quality meet company standards.
Support menu development and innovation with the Account Lead Chef and Head Chef, including menu planning, seasonal changes, DMP/menu planning and product tastings, ensuring all recipes and specifications are followed.
Manage kitchen controls including food purchasing, storage, stock management and stock takes, opening and closing procedures, food safety systems and food wastage management using contract tools/software.
Motivate and supervise the kitchen team, holding chefs’ meetings where required, and supporting daily food service briefs to Front of House, including full allergen communication to all staff.
Work to agreed budgets and targets, driving profitability for both ISS and the client through effective execution, portion control and minimising waste.
Represent the company professionally, providing high-quality service to customers and clients.
Professional and Personal Competencies/Qualifications Strong customer focus, with the ability to build positive relationships and respond quickly to customer and business needs.
Excellent communication skills, able to brief teams clearly, engage confidently with senior clients and support effective teamwork.
Proven experience as a Sous Chef (or capability to reach this level within probation), with experience in high-volume environments.
Strong culinary skills across a range of food styles, including retail, street food, deli, bakery, events, canapés and fine dining.
Solid understanding of food safety, HACCP, allergen management and maintaining audit-ready standards at all times.
Experience in kitchen leadership, motivating and supervising teams, leading service briefs and supporting team development.
Strong organisational skills with experience in stock control, ordering, portion management, wastage reduction and opening/closing procedures.
