<p> The Swan Inn in Wilton, near Marlborough is a busy country pub restaurant with 50 covers surrounded by the most stunning countryside in a picture postcard village, with excellent Tripadvisor reviews and a 5 star hygiene rating.</p>
<p> We serve up to 600 covers a week. We are a small team, as the proprietor and a former chef, I am looking for a candidate who wishes to grow their skills, a chef with a genuine passion for food, with an understanding that hospitality is about ensuring customer happiness and not settling for mediocrity. <p> Our focus is fresh food, traditionally British with a rustic feel, featuring seasonal produce and in particular fresh fish, and game (when in season).Our menu pays homage to the fact that we are proud to be a pub welcoming walkers, cyclists, families etc, but equally offers more to those that desire it. In general we aim for an uncomplicated approach using the best produce (locally sourced if possible), letting the food do the talking.</p>

<p>SOUS CHEF – EMBANKMENT BISTRO (MULTI-SITE ROLE), DARTMOUTH</p>
<p> We’re building something ambitious across our Dartmouth sites – Embankment Bistro, Crafty Mussel and Coastal Trail – and we’re now looking for a Sous Chef who’s ready to step into a key role within a growing, fast-paced kitchen operation.</p>
<p> This is more than just a single-site position. It’s an opportunity to be part of a wider team, supporting multiple kitchens, driving standards, and helping shape a consistent, high-quality food offering across the group.</p>
<p> THE ROLE</p>
<p> As Sous Chef, you’ll work closely with the senior team to support the day-to-day running of the kitchen. You’ll lead from the front during service, support across multiple sites when needed, and play a key role in maintaining standards, consistency, and team culture.</p>
<p> This is a hands-on role for someone who thrives in a busy environment, enjoys responsibility, and takes real pride in delivering quality food.</p>
<p> WHAT YOU’LL BE DOING</p>
<p> * Supporting the day-to-day running of the kitchen across multiple sites<br />
 * Leading service and ensuring smooth, efficient operations<br />
 * Maintaining high standards of food quality, consistency and presentation<br />
 * Supporting, motivating and developing junior chefs<br />
 * Managing prep, organisation and kitchen workflow<br />
 * Ensuring food safety, cleanliness and compliance standards are met<br />
 * Working closely with senior management to maintain and improve standards</p>

<p> *Job description:* This position will be responsible for crafting exquisite and innovative dishes that reflect the rich heritage and elegance of our historic castle. You will work closely within a team and with the Head Chef and the castle’s management team to create and prepare exceptional menus for retail operations as well as to cater to a variety of events, including but not limited to weddings, corporate gatherings, private dinners and public dining experiences.</p>
<p> *Responsibilities:*</p>
<p> · Co-develop and execute menus for various events and dining experiences, incorporating seasonal and locally sourced ingredients;</p>
<p> · Prepare and present dishes of the highest quality, ensuring excellent taste, texture, and presentation;</p>
<p> · Maintain a clean and organized kitchen, adhering to food safety and hygiene standards;</p>
<p> · Supervise kitchen staff (as needed), providing guidance and fostering a positive work environment;</p>
<p> · Stay update with culinary trends, techniques, and innovations to continuously enhance the castle’s dining offerings.</p>
<p> *This is a 7-day /week hospitality operation. As such, weekend and evening work will be required.*</p>
<p> *To be considered, the following criteria need to be met:*</p>
<p> * Minimum of 1 year of experience as a chef, preferably in fine dining for events and restaurants;<br />
 * Banqueting and wedding experience is an asset;<br />
 * Passion for delivering outstanding culinary experiences;<br />
 * Exceptional organizational and time management skills;<br />
 * Extensive knowledge of classical and contemporary cooking techniques;<br />

<p> You will be working at Wellesley Hospital, a purpose built 101 bed hospital in Wellington (Somerset) for men and women with mental health needs.</p>
<p> There are 6 wards for people with mental health needs and 1 ward for people with Learning Disabilities and Autism.</p>
<p> The Wellesley Hospital built in 2017 works alongside Devon Partnership NHS Trust, Avon and Wiltshire Foundation Trust, Cornwall Foundation Trust, 2gether Foundation Trust, and Livewell to deliver the best possible environment for patients with mental health issues.</p>
