Sous Chef

Job Summary We are seeking a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate will possess a deep understanding of Japanese cuisine, specialising in sushi preparation, and will be responsible for delivering high-quality dishes that meet our restaurant’s standards. Duties

• Prepare a variety of sushi, sashimi, and other Japanese dishes with attention to detail and presentation.
• Maintain strict hygiene and food safety standards in accordance with health regulations.
• Source and select fresh ingredients, ensuring quality and sustainability.
• Create innovative sushi menus that appeal to diverse customer preferences.
• Assist in training junior staff members on sushi preparation techniques.
• Manage the mise en place for daily service, including cutting fish, preparing rice, and organising ingredients.
• Ensure consistency in taste, appearance, and portion sizes across all dishes served.
• Maintain cleanliness of the work station throughout shifts and perform deep cleaning as scheduled. Skills
• Proven experience as a Sushi Chef or similar role within a busy restaurant environment.
• Extensive knowledge of Japanese cuisine, especially sushi techniques and presentation styles.
• Strong knife skills with the ability to prepare fish and vegetables efficiently and safely.
• Excellent organisational skills with an eye for detail in food presentation.
• Ability to work under pressure in a fast-paced setting while maintaining high standards of quality.
• Good understanding of food safety regulations and hygiene practices.
• Creativity in developing new sushi recipes and menu items.
