Sous Chef

Papillon located on historic Hope Street are hiring a Jnr Sous Chef ahead of our busy summer months. We’re looking for a candidate with sous experience with aspirations to progress with the company.

Responsibilities would include the following;

• Standard of service.
• Kitchen hygiene and procedure management through Trail.
• Contribution towards rota management and hiring.
• Management, with the Head Chef & Sous Chef, of recipe and spec books.
• Implement excellent standards in the BOH.
• Implementation of new menus with the Head Chef.
• Contribution towards hiring new staff and dealing with disciplinary processes.
• Full, comprehensive running of the kitchen in the absence of the Head Chef.
• Standard kitchen running and shift management.
